I want to be able to edit my WHMCS Support Ticket Priorities.

When a client opens a support ticket, they can choose Priority, High, Medium, Low. I want to add Urgent, Critical, etc.

Agree, we would also like to add an extra priority in here.
This really is a much needed feature. Severely limits the ticket system as soon as you have a decent amount of tickets coming through.

Please look at this one as a must needed fix WHMCS gurus!
Being able to modify priorities just like "Ticket Statuses" is absolutely needed.

With a little bit of work you can. Simply hide the fields and leave medium as the default. You can further remove the other mentions from the TPL files.

Also i'm sure you could easily edit the admin side TPLs to remove the flags in the ticket view list.

The problem with the priority system - is that you can't sort or filter the tickets by priority... let's say that i want to see all the high priority tickets (red flags) - there is no way to do it...
The priority column should have a filter \ sort option.
